Degradation of the coffee flavor compound furfuryl mercaptan in model Fenton-type reaction systems.

چکیده
The stability of the coffee flavor compound furfuryl mercaptan has been investigated in aqueous solutions under Fenton-type reaction conditions. The impact of hydrogen peroxide, iron, ascorbic acid, and ethylenediaminetetraacetic acid was studied in various combinations of reagents and temperature. Furfuryl mercaptan reacts readily under Fenton-type reaction conditions, leading to up to 90% degradation within 1 h at 37 degrees C. The losses were lower when one or more of the reagents was omitted or the temperature decreased to 22 degrees C. Volatile reaction products identified were mainly dimers of furfuryl mercaptan, difurfuryl disulfide being the major compound. In addition, a large number of nonvolatile compounds was observed with molecular masses in the range of 92-510 Da. The formation of hydroxyl and carbon-centered radicals was indicated by electron paramagnetic resonance spectra using alpha-(4-pyridyl-1-oxide)-N-tert-butylnitrone or 5-(diethoxyphosphoryl)-5-methyl-1-pyrroline-N-oxide as spin traps. Whereas *OH was generated by Fenton-type reactions, the C-centered radical is probably a secondary product of the reaction of *OH with various organic molecules, the reaction with furfuryl mercaptan appearing to be the most important. No evidence for S-centered radicals was seen in the spin-trapping experiments, but a sulfur-containing radical was detected when measurements were made at 77 K in the absence of spin traps.

The entry of mercaptans into the environment as an odor pollutant has always been considered as one of the environmental concerns. In this research, a sonochemical oxidation (sono-Fenton) method was used for rapid deodorizing of tert-butyl mercaptan (TBM) contaminated soil. The design of the experiments was conducted by CCD method and the effect of four different factors was investigated on the...
متن کاملFast and environmental-friendly degradation of tert-butyl mercaptan from contaminated soil using bimetallic-modified Fenton process
In this work, the fast remediation of tert-butyl mercaptan from the polluted soil via a bimetallic Fenton treatment that included Fe2+/Fe3+/Fe0/Cu2+ in the presence of gasoline was studied. The analysis of variance and the Pareto analysis resulting from the central composite design (CCD) showed that the H2O2, CuSO4<...

Pentachlorophenol (PCP) is a very hazardous compound which enters into the environment by industries such as refineries and petrochemicals. As its biological degradation is very slow, this use may cause the pollution of soils and groundwater; with the recent emergence of pentachlorophenol contamination as an important drinking water quality issue, finding an easy, economical, and useful method ...
متن کاملSynthesis and structure determination of covalent conjugates formed from the sulfury-roasty-smelling 2-furfurylthiol and di- or trihydroxybenzenes and their identification in coffee brew.
Recent investigations demonstrated that the reaction of odor-active thiols such as 2-furfurylthiol with thermally generated chlorogenic acid degradation products is responsible for the rapid aroma staling of coffee beverages. To get a clear understanding of the molecular mechanisms underlying this aroma staling, the existence of putative phenol/thiol conjugates needs to be verified in coffee. T...
متن کاملFormation of cysteine-S-conjugates in the Maillard reaction of cysteine and xylose.
Cysteine-S-conjugates (CS-conjugates) occur in foods derived from plant sources like grape, passion fruit, onion, garlic, bell pepper and hops. During eating CS-conjugates are degraded into aroma-active thiols by β-lyases that originate from oral microflora. The present study provides evidence for the formation of the CS-conjugates S-furfuryl-l-cysteine (FFT-S-Cys) and S-(2-methyl-3-furyl)-l-cy...
